Tuesday night

Hello lovely students. The blogs look good.  Try to use more and different descriptive words and try for more pictures.

Everyone who has done a salad for class has to write up the recipe. All recipes will be due by Friday.

Remember that Thursday you need to have your memoirs or you will be punished. The punishment may be having to listen to me sing a song about cooking. I strongly suggest getting a book. Also, that evening I will be meeting with your parental units. Something to think about!

Also, on Thursday, we are going to be making the tomato watermelon salad for the school.  The salad will be composed of chunks of heirloom tomatoes, chunks of seedless watermelon, cucumber slices, feta, shredded fresh mint, lemon juice and some coarse salt.

For Friday I want everyone to bring in a tasty vinaigrette, made from scratch. No need to make either the vinegar/acid or the oil/fat. You can use what you have at home. That was a little food joke, of course we cannot make oil. Or a lemon. Bring it in a container or a jar with a tight fitting lid. Add some stuff that will make it different. Spices, types of acid, etc..... We will shake it in class and taste them on some greens. There is room for creativity here. You don't need much. Maybe a cup or less.

The recipe from class was

1 tablespoon Dijon mustard
1/4 cup white wine vinegar
3/4 cup olive/canola blend
1 tablespoon chopped fresh tarragon
salt and pepper to taste

1. In a medium bowl, combine the mustard and the vinegar.

2. Very slowly, add the oil, whisking vigorously as you drizzle.  Continue until all the oil is incorporated.

3. Add the fresh tarragon and the salt and pepper to taste.
